Thai Green Curry Fried Noodles

Direction
1. Prep noodles
Soak rice noodles in warm water for 5 minutes until softened. Drain.
2. Cook veggies
Heat oil in a skillet.
Add mixed veggies and cook for 3 minutes.
3. Add curry paste
Stir in green curry paste and cook for 1 minute to bloom the spices.
4. Add coconut milk
Pour in coconut milk → simmer for 2 minutes.
5. Add noodles
Add softened noodles to the skillet and toss to coat.
Cook 2–3 minutes until noodles absorb sauce.
6. Season
Add salt to taste.
Notes / Tips
Add protein: shrimp, tofu, chicken
Add herbs: Thai basil, cilantro
Make spicy: add chili oil
Make creamy: add extra coconut milk
