Japanese Curry Fried Noodles

Direction
1. Prepare the egg
Heat a small non-stick pan with a little oil.
Fry the egg sunny-side-up until the edges are crispy and yolk is still runny (or to your preferred doneness).
Set aside.
2. Stir-fry the carrots
In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat.
Add julienned carrots and stir-fry for 2 minutes, until slightly softened but still crisp.
3. Add the noodles & seasonings
Add the cooked ramen noodles to the pan.
Sprinkle curry powder evenly over the noodles.
Pour in the soy sauce.
Toss everything together for 3 minutes, making sure the noodles are fully coated in the curry-soy mixture and heated through.
4. Assemble
Transfer noodles to a serving bowl.
Top with the fried egg.
Add optional garnishes like chopped green onions or sesame seeds.
Notes & Tips
Use Japanese curry powder (S&B brand) for authentic taste.
Add a splash of water if noodles feel dry.
You can add onions, cabbage, or leftover veggies for a heartier meal.

- ½ medium lime, cut into 3 wedges, divided
- 2 tablespoons white sugar, or to taste

- ½ cup club soda, or as needed
2 packs ramen noodles, cooked and drained
1 tsp curry powder
1 Tbsp soy sauce
½ cup carrots, julienned
