Middle Eastern Sumac Chicken & Rice Pilaf

Direction
1. Cook chicken
Season chicken with sumac and salt.
Heat oil and sear chicken 5–6 minutes until browned.
2. Start pilaf
Melt butter in a pot. Add rice and stir for 1 minute to lightly toast it.
3. Add water
Add water + pinch of salt.
Bring to boil → reduce heat → cover 15 minutes.
4. Serve
Fluff pilaf and top with chicken.
Notes / Tips
Perfect with: Greek yogurt, cucumber salad, hummus
Add veggies: peas, carrots, onions
Swap chicken: turkey or tofu
Add nuts: toasted almonds or pine nuts

- ½ medium lime, cut into 3 wedges, divided
- 2 tablespoons white sugar, or to taste
- 1 cup ice cubes, or as needed
- 1 ½ fluid ounces white rum
- ½ cup club soda, or as needed

1 tsp sumac
½ tsp salt
½ tbsp oil
Rice Pilaf:
1 cup rice
2 tbsp butter
1 ½ cups water
