Tunisian Shakshuka Orzo

Direction
1. Sauté vegetables
Heat oil → add onion, pepper, garlic.
Cook for 4 minutes until softened.
2. Add tomatoes + spices
Add crushed tomatoes, cumin, paprika, and salt. Stir.
3. Cook orzo
Add orzo + 1 cup water.
Simmer uncovered for 10 minutes, stirring often so it doesn’t stick.
4. Add eggs
Make two small wells. Crack eggs into them.
Cover and cook 3–4 minutes until whites are set.
5. Serve
Spoon into bowls and enjoy the warmth.
Notes / Tips
Add heat: red pepper flakes
Add greens: spinach, kale
Add cheese: feta or goat cheese crumbles
Swap orzo for rice, couscous, or quinoa
